3 tbsp olive oil
1 1/4 pounds king oyster mushroom
2 bay leaves
1 yellow pepper (sliced)
1 red pepper (sliced)
1 red onion (small diced)
4 cloves of garlic (minced)
3/4 cup red wine
6 oz tomato paste
2 cups vegetable stock
10 green olives (sliced)
salt and pepper to taste
Heat the olive oil in a sauce pan over medium high heat, add the onions, peppers, garlic, and mushrooms. Saute for about 2-3 minutes or until the onions turn translucent. Add the red wine and deglaze -- allow the alcohol to evaporate and the mixture to come together.
Add in the tomato paste, olives, bay leaves, and vegetable stock. Mix well and simmer (covered) to desired consistency, making sure to stir every so often so that the sauce doesn't stick. We simmered for about 20 minutes but some people like their ropa vieja more or less saucy, up to you!
